Figure of 8's can be tricky for both dog and owner to get used to.
They can also be excellent training tools so be persistent and your walks and bond with your dog will get so much stronger and happier as the day-to-day frustrations of walks subside.
How to put a figure of 8 on? We will start with a Softex lead, please see the third video for a rope slip lead.

I have a question with regards to the neck part. I was always taught to put a leash on the neck with looking at a “P” when sliding it over their head. If it is put on in a backwards P then the choke part does release properly. I see in your video that it doesn’t sit like a P on the neck which would release its backwards… does that not make a difference for the choke part? Where being backwards it will choke and not release properly. I hope this makes sense as I would want to be sure it’s being put on my dog properly. I gave a picture but can upload one on your comments here.
